Editorial Reviews:

Description
It doesn't matter whether you can make the fanciest gourmet meal if you lack the skills to do something as basic as poach an egg. Once you acquire those basic skills, your culinary repertoire is limited only by your imagination. The Complete Pepin is an entire cooking course on DVD that features dozens of techniques that Jacques has sharpened over his decades in the kitchen.

5 out of 5 stars French Cooking 101   December 24, 2008
Jacques Pepin is not only a master chef and artist, he is also a wonderful instructor. If you've been curious about the art of French cuisine, this is the most thorough instruction you could receive, especially at this price. He seems to have thought of everything you might need to know, all the way from selecting and sharpening knives to how to use food as a decoration. As for the food, he starts with how to select your food items, then shows you several different ways to prepare each, including presentation. Some of the techniques that really stood out to me are the Buche de Noel (Yule Log cake), making a caramel sauce, preparing fish, making merinque mushrooms, decorating a pate, the French omelet vs. the American version, variety of uses for pastry dough, etc. Once you see how fun and easy these can be, you'll want to try it yourself!

5 out of 5 stars great gift for newby cook   December 21, 2008
Anyone just starting to cook can be off and running quickly with this guide to basic techniques. The egg section alone is worth the price.

5 out of 5 stars Good One   December 1, 2008
I had seen this on vhs when it was out, and it was a must have. It shows techniques to help in a common kitchen all the way to the gourmet. It is a bit inefficient how it was transfered to dvd,you have to click on each item instead of watching it all the way through, but, it's nice that you can just watch one item if you are looking for a specific technique.

3 out of 5 stars Lots of techniques, very little cooking   August 1, 2008

This set is good if you want to learn specific techniques, but not if you want to see recipes cooked from start to finish. The few actual cooking segments are not easy to find and you spend a lot of time going back and forth to the main menu. The set is instructional, but not entertaining. If you want to be amused and instructed, try Julia & Jacques Cooking At Home

5 out of 5 stars Jacques Pepin - guarantee of quality   June 26, 2008
